Recipe: lemon raspberry cream bars

These are so not 'healthy' but they are totally worth the 167 calories (assuming you cut 35 bars)!

You will need:
1 lemon cake mix
2 eggs
1 stick butter or margarine
3/4 c. raspberry preserves
1 8 oz. block cream cheese (sadly you can't use reduced fat)
12 oz. white chocolate
2 tbs. milk
2 tbs. powdered sugar

Preheat oven to 350 degrees. Mix cake mix, butter and egg. Press into a greased 10X15 bar pan. Bake 15-18 minutes or until a toothpick inserted in the center comes out clean. Spread with raspberry preserves. Let cool completely. Once cool, mix the cream cheese and milk. In the microwave or a double boiler melt chocolate and combine with cream cheese. The mixture will appear curdled (it's not). Gently spread over the preserves. Dust with powdered sugar. Cool in fridge for at least 1 hour before you cut these bars so the top layer sets properly.

I'll consider it....like usual, the cream cheese scares me a little bit.
